A wine with a tradition that goes back centuries, considered sacred – it was even used to celebrate mass – as far back as medieval times, that rewards those who know how to wait with its golden sweetness. Farmers used to produce it with pride, and still do so today. The process required to make it is long and demanding, but it also lasts a long time, almost an infinity. In fact, as time goes by the taste and bouquet are enhanced, so at the Fattoria the precious Vin Santo Riserva wines age for years. In 2018 the grape harvest was carried out with ideal weather for both the Trebbiano, which gives freshness and structure, and the Malvasia, which is more aromatic and softer. After drying out, the bunches were pressed in December, and the musts vinified separately. After which they fermented in caratelli barrels containing roughly 100 litres for at least 4 years, with the "mother" (see page 33), in a slow but continuous process. The wines from the caratelli were then blended and the Vin Santo was bottled.
Tasting – Colour: deep amber yellow with gold nuances. The nose: an explosion of aromas, dried figs, dates, walnuts and hazelnuts, apricots in syrup, tobacco leaf, as well as hints of mushrooms and forest floor. In the mouth: vanilla, sweet, with an intense aromatic richness, and a silky soft mouthfeel the lingers on the palate for tens of seconds .... incredible!
Wine and Food Pairing – As per tradition, it can be enjoyed in the company of friends, served with Cantucci biscuits, “Ricciarelli” from Siena or other sweet delights, and it also goes nicely with certain aged pecorino cheeses.... but the best thing is probably to sip it alone, with your eyes closed, indulging in a pleasure that requires nothing else.
