These tempting “mini-salamis” are very rare, for various reasons. Their reduced size means that the process of making and maturing them requires particular care. They are certified organic and handmade, with meat produced without the use of hormones and antibiotics. They don’t contain nitrites, nitrates, sodium ascorbate or lactose, just a 100% Viallino mixture of natural herbs and spices, amongst which Tuscan fennel seeds, which give them an unmistakeable flavour and aroma. They are also gluten free but... packed full of flavour!
